COLCHESTER, Vt. (Catholic Online) - Maple season is here! Try the Maple Cream Pie and/or the Maple Pumpkin Bread recipe(s).

Maple Cream Pie Ingredients: - 1 cooked pie crust - 2 1/4 cups milk - 2 cups 'Grade B syrup' - 3 egg yolks, beaten - 4 heaping tablespoons flour - 1 dash salt - 2 teaspoons vanillaDirections - Combine the milk, maple syrup, eggs, flour and salt in a microwave dish. Mix well and then microwave on high, for 5 minutes. Then repeat for 5 minutes. Check, and cook for an additional 2 minutes.
- Add vanilla and stir.
- Put pudding in pie crust and set aside. Meringue ingredients: 3 egg whites ½ teaspoon vanilla
ÂĽ teaspoon cream of tartar
6 tablespoons of sugar - Beat together egg whites, vanilla and cream of tartar. Gradually add sugar while beating into stiff and glossy peaks. Spread over hot filling of the pie and bake at 350 degrees for 12-15 minutes. - Cool the pie, cover and store in the refrigerator.Maple Pumpkin Bread Recipe by Karen Fortin Ingredients: - 1 ½ cups 'Grade B Maple Syrup' - 1 ½ cups sugar - 4 eggs - ¾ teaspoon salt - ¾ tablespoon baking powder - 1 ½ teaspoon cinnamon - 3 cups mashed pumpkin (may substitute squash) - 1 cup oil - 4 ½ cups flour - 1 ½ teaspoon baking soda - 1 ½ teaspoon cloves - 1 ½ teaspoon nutmeg Directions: Beat syrup, sugar, eggs and oil together, add pumpkin. Add dry ingredients. Bake at 300 degrees for 1 hour and 20 minutes. Test with cake tester. Makes 3 standard loaves or 5-6 small loaves. This bread freezes well.
