PORTSMOUTH, VA. (Catholic Online) - Weiss Fish with Tomatoes and Pine Nuts:
Ingredients:
Pine Nuts: ½ cup
Tomatoes: 2 cans organic diced, drained or 4 large fresh, diced
Olive Oil: 3-6 tablespoons
Garlic: 1 tablespoon organic minced
Bay Leaf: 2 leaves
Dill: 1 tablespoon dried or 2 tablespoons chopped fresh
Wine: 1 ½ cup white, dry
Kosher Salt: ½ teaspoon (to taste!)
Pepper: Freshly ground
Fish: 4-6 "white" fish fillets, 6-7 oz each (i.e. Tilapia, Halibut, Cod)
Parmesan: to garnish
Directions:
#1 - In a heavy frying pan over medium heat, toast the pine nuts, stirring, until lightly colored and fragrant, 1-2 minutes. Set aside.
#2 - In a large sauté pan or deep frying pan over medium-low heat, warm the olive oil. Add the garlic and sauté gently, stirring, until it just starts to change color, 1-2 minutes. Add the bay leaf, dill, and tomatoes and cook gently, uncovered, until the tomatoes start to break down and release their juices, 8-10 minutes. Stir in the wine, salt, and pepper to taste. Continue to cook, uncovered, until the tomatoes are tender, about 10 minutes longer.
#3 - Carefully lay the fish fillets on top of the tomatoes in a single layer. Cover and barely simmer over low heat until the fish is white and flakey, 12-15 minutes, depending upon the thickness of the fish; do not overcook.
#4 - To serve, carefully transfer the fillets to a warmed serving platter. Spoon the tomatoes sauce over the top and around each fillet. Garnish with the toasted pine nuts and parmesan. Serve immediately.
