(Catholic Online) - Warmer spring temperatures are a sign that picnic season is here and an opportunity to prepare more of a variety of salads. Waldorf salad is a welcome change from the usual green salads and it includes a serving of fresh fruit.

Waldorf Salad 2 cups diced, pared pears or 1 cup each of diced pears and pared red apples 2 tablespoons lemon juice 1 teaspoon granulated sugar ½ cup mayonnaise 1 cup thinly sliced celery ½ cup coarsely chopped walnuts Lettuce Toss fruit with lemon juice, sugar, 1 tablespoon mayonnaise. Just before serving, add celery, walnuts, the rest of mayonnaise. Toss.
