BALTIMORE, Md. (Catholic Relief Services) - Lent is a time we can fast in solidarity with our brothers and sisters around the world by preparing and eating simple, meatless meals from different parts of the world.
Highlights
The Lenten recipe of the week, reprinted from the Catholic Relief Services Operation Rice Bowl materials, is a Nicaraguan dish, "Gallo Pinto."
Mealtime blessing: "We thank you, Lord, for this food, our family, friends, and home, and offer special prayers for those who are without food." Gallo Pinto from Nicaragua Serves 4 - 1 cup rice - 2 cans kidney beans, drained - 2 medium onions, finely chopped - 3 cloves garlic, finely chopped - 3-4 tbsp. olive oil - 1 tsp ground cumin - 1 tsp coriander - 1 tsp paprika - salt and pepper Cook 1 cup of rice according to the instructions. In a pan, fry onions and garlic in olive oil until soft. Add beans, coriander, cumin, and paprika and cook until heated through. Combine rice and bean mixture. Add salt and pepper to taste. Serve hot.---
